Our Smart Kitchen Guacamole is derived from the 1st Place Guacamole Recipe from the 2005 Annual California Avocado Festival won by Gayle Bamber of Fallbrook, CA, the Avocado Capital of the U.S. We swapped out Serrano Sauce for Adobo Sauce and use fine diced chipotle chilis. We also use tomato  concassé as opposed to diced tomatoes. Its more work but we feel the extra refinement and "Flair" suits the smoky spicy dish. It is a bit hot but you can dial it up or down by adding or subtracting from the Adobo Sauce.

Organization 

Decide how you will be preparing your Guacamole. Will you be doing some tasks ahead of time, or all at once. The preparation is is fairly straightforward and can be done all at once. If you are considering Guacamole as part of a larger meal, perhaps it would be best to do some work ahead of time. If nothing else, leave the avocados for last. Avocados oxidize quickly. In the Preparation and Method below we assume all is done at once.

 

Preparation

Peel Your Onions and then Dice them. Throw them into your mixing bowl. Concassé your tomato*. Toss it into the bowl.  Brunoise or Fine Brunoise your Chipotle Chilis. Toss them into the bowl. Chipotle Chilis are often packed in Adobo Sauce, which should be retained to use "to taste" to "Finish" the Guacamole. Look for the words "Packed in Adobo Sauce" before you purchase your Chipotles.

Finally, add in 2 T of Lemon Juice, for flavor and to add an acid to help retard Oxidation.

Essentially, prep all your ingredients, except the Hass Avocados and retain the Adobo Sauce and Garlic Salt for finishing the Guacamole. Avocados will Oxidize quickly so they should be left for last, just before service.

 

Method

When you have prepped your other ingredients and are ready to serve your Guacamole, place all your other ingredients in your Kitchen Bowl.

Next, Open and De-Pit the Hass Avocados. Skin the 10 resulting halves. Work quickly but safely and confidently. If you have any small chefs, spooning out the avocado fruit into the bowl might be an interesting project for them as might the mashing step that follows.

Finally, mash your Avocado halves to your desired consistency with a kitchen spoon or a fork. Once mashed sufficiently, add in your other ingredients and mix them together gently by hand.

Finish by adding Adobo Sauce and Garlic Salt to Taste. Serve with Chips or use your imagination.
