Try Making a Vodka Sauce before Making the Spaghetti Squash. If you are a vegan, trying to lose weight, or your New Year’s Resolution is to try new things, this is a great recipe to try! The Spaghetti Squash tastes a lot like real pasta but it is jam-packed vitamin strand and is high in fiber. The vegetable is textually similar to pasta due to the high fiber content! The best part--it is super simple to make!
Method
Preheat the oven to 350 degrees F. The most difficult part of this recipe is the splitting the spaghetti squash. On the Cutting Board, slice the Squash straight down the middle (length wise.) Each side will have some seeds. Run a tablespoon through the squash end to end, and scoop out and discard the seeds.
Fill ½ inch to 1 in of water on the bottom of the Large Baking Dish. Set both cut sides of the squash, flesh facing down, in the water. Place the Baking Dish in the 350 degree F oven and bake for 45 minutes.
When the squash is hot it is much easier to shave out. Take a kitchen towel and hold the back of it before applying the fork to the flesh. This allows for minimal burning and a solid grip. Run the fork down the flesh. Once the flesh is pulled away, place the spaghetti like strands in a holding bowl. Top with your favorite red sauce or Smart Kitchen’s Vodka Sauce.
