Exercise 1: Measuring for Recipes

Glaze, De-Glaze or Demi-Glace; Sauté or Pan Sear. To even robotically follow a well written recipe (a major assumption), you have to:

1. Speak the Language.

2. Be Proficient with the Techniques.

Culinary consistency and memory, are often aided by Recipes which, as you know, attempt to record the ingredients, their proportions, and the sequence of procedures performed upon them to replicate a dish. It should be simple, but it isn't.

Recipes can go off track, through misinterpretation, sloppy execution and poorly written Recipes. The latter is especially true with the "train wreck of Internet recipes, of the unknown origin and quality. The only defense against a poorly written Recipe is general culinary knowledge, essentially spotting the written mistakes and correcting them before reproducing a disaster.
