Papaya Salsa

Approximately 2 cups of Papaya Salsa
  • ½ Red Onion (Macédoine)
  • 2 Papaya (Macédoine)
  • 1 Jalapeno Pepper (Brunoise)
  • 1 Bunch of Cilantro (Rough Chopped)
  • 2 T of Fresh Ginger (Minced)
  • 1 T of Lemon Juice

The bulk of the work in this recipe is in the Preparation, the second of Smart Kitchen’s 4 Levers of Cooking.  Begin with the Onion. Dice the Onion to a Macédoine. Prepare the Papaya so that the skin and seeds are removed and then take the flesh down to a Macédoine.

De-Rib and De-Seed the Jalapeno Pepper before taking it to a Brunoise. Chop the Cilantro and finally Mince the Fresh Ginger.


The method here is as simple as mixing all of the prepared ingredients together and then adding the Lemon Juice. Stir gently to incorporate.

Serve it immediately or chill it in the refrigerator for an hour. If making ahead of time, this Papaya Salsa should be good for 4-5 days in the refrigerator. In fact, time in the refrigerator will actually enhance the flavor of this tropical salsa.
