Oyster Mushroom Fritters pair well with a  Tarragon Chive Aioli  as a Dipping Sauce. Smart Kitchen has another similar recipe, Oyster Mushroom Fritters that can be made using diced Oyster Mushrooms in the batter.


Crack the Eggs into a medium Mixing Bowl. Add in the All Purpose Flour, Club Soda, White Pepper and Kosher Salt. Whisk the mixture. Once whisked, the Batter is ready for the Oyster Mushrooms to be dipped. If you are a stickler, you may want to return your batter to the refrigerator for a half hour or so, to let it set up more fully.

While the batter cools and sets, you can rinse your Oyster Mushrooms and tear them into bite-sized or 2-bite-sized, mushroom shaped pieces.


To begin the active method, place a medium Saucepan over Medium High Heat. Pour in the Canola Oil. Once the Canola Oil’s Smoke Point has been reached, you can begin Pan Frying.

Using tongs or a slotted spoon (not your hands), dip the Oyster Mushrooms into the batter and place them into the Canola Oil. Work in small batches of 3-5 batter-coated mushrooms and Pan Fry the battered Oyster Mushrooms until they are golden brown all the way around.

Once they are golden brown, use your tongs (or slotted spoon) to transfer the battered Fried Oyster Mushrooms onto a paper towel to drain any excess Fat. Serve hot immediately. The Battered Fried Oyster Mushrooms won’t Hold well.
