Recipe Checklist:

  • 2 oz Orange Juice, (without pulp)
  • 3 oz Heavy Cream
  • 1 tsp of Honey
  • 1 tblsp of Lemon Juice
  • 4 oz of Heavy Cream
  • 1 tsp of Granulated Sugar
  • 1 tblsp of Fresh Mint, (minced)

Whip the Heavy Cream and 1 tsp of Granulated Sugar until you reach a Stiff Peak. Combine your whipped cream and fresh mint in a mixing bowl. With a rubber spatula, fold in ingredients until fully incorporated. Set aside.


Place your Peaches and orange juice in a food processor. Purée the peaches then add in the yogurt and purée until fully incorporated. Next add in the heavy cream and purée as you did with yogurt. Finally, add the honey and lemon juice.

After you have the desired consistency, strain your soup through a fine mesh strainer holding a small mixing bowl at the bottom to collect the soup. To prepare your soup for service, pour your peach bisque into a serving bowl, about half way, and place a dollop of Mint Chantilly on the surface. Garnish the Peach Bisque with a sprig of mint. Chill before serving.
