The Preparation, the 2nd of Smart Kitchen’s 4 Levers of Cooking™ is fairly straightforward when making this French Bean Salad Garnished with Crispy Shallots. The Shallots should be Peeled, as you would Peel an Onion, and then Julienned.

The French Beans should be Prepped and then Blanched before you begin. The sprigs of Fresh Thyme should be rinsed and then De-Stemmed, as you would De-Stem Rosemary to remove the leaves for use.

Cover a dinner plate with a few paper towels, to hold the Sauté Shallots when they come out of the Sauté Pan and absorb any excess Oil.


To begin the active phase of the recipe, place a medium Sauté Pan over Medium/High Heat. Pour in the Refined Olive Oil. Once it approaches its Smoke Point, add in the Julienned Shallots. Sauté the Shallots until nicely Browned and crispy, when you should remove them from the pan and let them drain on the paper towels on the dinner plate.

Next, pour in the Balsamic Vinegar and add the fresh Thyme. Stir a little and then Season with Kosher Salt and freshly ground Black Pepper to taste. Reduce the Balsamic mixture until it is Nappé and then set it aside.

Finally, place the Prepped and Blanched French Beans in a medium Mixing Bowl. Add all the other ingredients and Toss them all together gently.

Serve the French Bean Salad, warm or hot and Garnished with the crispy, Sautéed Shallots.
