Recipe Checklist:
  • 8 oz Fresh Cranberries, (washed)
  • ½ Fresh Pineapple, (small diced)
  • 2 Peeled Bosc Pears, (small diced), keep in acidulated water
  • 2 C (cups) Port Wine
  • 4 oz Honey
  • Full Zest from 1 Valencia Orange
  • 1 Stick of Cinnamon
  • 1 Small Can of Apple Juice (5.5 fl oz)

  • Chefs Knife
  • Measuring Cup
  • Large Sauce Pan
  • Zester
  • Balloon Whisk

Begin by preparing all of your ingredients, including Zesting the Orange and Dicing the Pineapple. Next combine all the ingredients, except the Bosc Pears, in a large Sauce Pan.

Using Medium Heat, bring everything to a SimmerManage the Cooking Process, the third lever of the 4 Levers of Cooking, ™ and keep it at a simmer for 30 minutes.

After 30 minutes, add the Pears, and then continue the simmer looking for a Visual Clue that the sauce is nearing completion. In this case, the Visual Clue will take the form of the fresh Cranberries beginning to burst approximately 10-15 minutes after the Pears have been added to the mix.

Lightly stir your burst Cranberry Sauce with a Balloon Whisk for 1-2 minutes then remove the sauce from the heat. It is ready to serve.
