Change up the standard French Fry with a Healthier, Tastier Alternative with Sweet Potato Fries!


Begin by Squaring Off the Sweet Potatoes prior to cutting them into Batonnet or matchstick shaped rectangles.


Next, heat a large Skillet. When hot enough, add the Canola Oil and the bacon fat to the pan. When the oil and bacon fat combination begins to get legs (like wine) from the heat and exhibits the first signs of smoking, you have reached the Smoke Point temperature and it is time to add the Sweet Potatoes. Manage your cooking heat from here on out, so it stays constant and does not get much hotter or cooler.

Pan Fry the Sweet Potatoes over Medium Heat for 6-8 minutes, or until they reach the desired level of tenderness. When they are done how you like them, use tongs to lift the Sweet Potato Matchsticks from the oil. Place them on a paper towel to absorb any excess oil.

If needing to reheat, place the skillet on Medium High Heat and return the fries to the heat. Crisp the fries until crunchy and golden brown. It should take 2-3 minutes. Season with Sea Salt or other seasonings. Serve immediately.
