Recipe Checklist:

  • ½ cup Madeira Wine
  • ¼ cup Fresh Chives (Sliced)

The Morel Mushrooms will need to be cleaned before use. Smart Kitchen has a Cleaning Morel Mushrooms Exercise if you wish to learn more. Once cleaned, Slice them in half lengthwise.

The fresh Chives will also need to be rinsed and dried before being Sliced into rounds.


To begin the active phase, place a medium-sized Skillet or Sauté Pan over Medium Heat. Sauté the Morels in the Whole Unsalted Butter for 1 to 2 minutes on each side. Remove the Morels, and place them in a holding dish so you leave the original Skillet free for the next step.

In the same pan that you Sautéed the Morels, add the Madeira Wine to the pan to Deglaze the pan and to start building your Sauce. Scrape the sides and bottom of the pan with a wooden spoon to dislodge any Fond left over from cooking the Morels.

Raise the heat to Medium High Heat and bring the Madeira Wine to a Boil. Once a Boil has been reached, drop the heat to Medium Low Heat and let it Simmer. Add the Sautéed Morels and Reduce the Madeira until it is Nappé. Once Nappé, Season with Kosher Salt to taste.

Remove from the heat and then add in the Sliced Chives.

Give everything a gentle stir to incorporate everything and then serve hot over Beef, Chicken, or Pork.
