Roasting makes Shallots even sweeter and Roasted Shallots which are then peeled and Puréed are a great addition for flavoring Soups and Sauces.


Begin your Preparation, the 2nd of Smart Kitchen’s 4 Levers of Cooking™ by pre-heating your Oven to 375˚ F (190˚ C).

While the Oven heats up, Peel your Shallots as you would Peel an Onion. Put each Peeled Shallot into a large-sized Mixing Bowl. When they are all peeled, add in the Vegetable Oil, Kosher Salt and Black Pepper and Toss everything together until they are evenly coated. Make sure to select a Vegetable Oil that is suitable for higher heats.


Transfer the coated Shallots to a Roasting Rack over a Sheet Pan. Once the oven has reached 375˚ F, place the Shallots into the oven.

Roast them until they are slightly crispy and charred on the outside and Knife Tender on the inside. The Roasting Time should take about 30-40 minutes.

Once they are Knife Tender, remove the Shallots from the Oven and allow them to cool for a few minutes. Season them with Kosher Salt, or Black Pepper, if desired. Serve warm immediately or Hold for use in another Recipe.
