Preparation

Begin your Preparation, the second of Smart Kitchen’s 4 Levers of Cooking,™ by whipping up some homemade Mayonnaise, unless you already have some on hand. Use your Mayonnaise, or store bought if you must, to make an Orange Chipotle Mayonnaise which will be one of your ingredients when you start the active method of the recipe. The ingredients for Orange Chipotle Mayonnaise are included in the ingredient list (OJ, Mayonnaise & Chipotle Chilies) but will be redundant if you already have some on hand, or if you make yours by following the linked Smart Kitchen Recipe for Orange Chipotle Mayonnaise.

Method

Begin the active work of making this Tex-Mex Coleslaw by placing the ¼ Cup of Orange Chipotle Mayonnaise into the Kitchen Bowl with the Lime Juice. Add the Vinegar, Honey, Cumin, Salt & Pepper. Whisk the ingredients together to make the Salad Dressing for the Tex Mex Coleslaw. Taste the Salad Dressing for the Tex-Mex Coleslaw. Does it need more zing or to hold back its horses? Adjust the dressing with the Orange Chipotle Mayo if it needs some kick.

If you have not yet done so, combine the Cabbages, Carrots, Radishes, Corn, and Cilantro in a large Kitchen Bowl (though a large Food Processor Container can work as well), and then add in the Whisked Salad Dressing.

Toss all the ingredients to coat them with dressing. When they are all well coated, cover the larger bowl and refrigerate it for at least 2 hours to chill the Tex-Mex Coleslaw.

Tex-Mex Coleslaw can also be made 1-2 of days ahead and refrigerated until service.

When you are ready to serve your Tex Mex Coleslaw, Toss it once again before presentation. Tex Mex Coleslaw can be plated individually, used as a Side Dish or Garnish or served “Family Style” in a larger bowl at the center of the table.
