Recipe Checklist:

This Toasted Parsnip Mash is a perfect accompaniment for his Coffee-Braised Venison Shoulder that is also listed elsewhere in the Smart Kitchen Recipe Section.


Begin your preparation by Peeling & Trimming the Parsnips. Next, place them on a thin, oven-safe Baking Sheet and rub them with Oil using a Pastry Brush. Roast the Parsnips in a 325° F (163° C) Oven for around an hour, or until they are golden brown on one side.

After they are Browned, pull the Baking Tray from the Oven with Oven Mitts. Place them in a large Mixing Bowl or sturdy Salad Bowl for Mashing. Mash them, as you would Potatoes, with a Potato Masher.  When they have broken down a bit, add in the Whole Butter, the Heavy Cream, and the sharp Grated Cheddar Cheese. For a healthier version omit the dairy items above.

Continue Mashing them until they are chunky, and/or the desired consistency that you prefer. Once mashed to your satisfaction, Season with Salt & Pepper to taste and then you can serve immediately or Hold Warm for service.

Two alternatives are:

1.       To use a Food Processor to break down the Parsnips, but that would avoid some useful, minor exercise which could off-set (minimally) the addition of the tasty, dairy fats just above.

2.        Make the Toasted Parsnip Smash healthier by omitting the tasty, fattening Dairy ingredients above and also Mashing them by hand.
