Recipe Checklist:

  • 2 Shallots, minced
  • 1 pound morels, sliced
  • 2 tablespoons All Purpose Flour
  • 4 cups Beef Stock or Beef Broth
  • 1 cup of Half and Half Cream
  • 3 T Sherry
  • White Pepper to taste
  • Salt to taste
  • 2 T minced fresh parsley for garnish

Set up your Work Station. Mince the Shallots, Slice the Chives, and Rough Chop the Morels. Set aside to begin cooking.


To begin, place a medium sized Sauce Pan over Medium Low Heat. Add the cubed Unsalted Butter and wait for it to Melt. Once Melted, Sweat the Minced Shallots and Sliced Morels for 12-15 minutes.

Next, with a Mixing Spoon, stir in the All Purpose Flour and cook for 5 minutes. Pour in the Beef Stock/Broth and give it a gentle stir. Add the Half and Half with the White Pepper and Salt to taste. Give everything a quick stir again and increase your heat to Medium Heat.

Bring the Morel Bisque to a Simmer. Once a Simmer has been reached, the Morel Bisque is ready for the finishing touches.

Pour in the portions into the soup bowls and add a Drizzle of Sherry in each bowl, a Dash of Salt if needed, and top with a Pinch of the Minced Parsley for Garnish. Serve warm.
