  • 1 tblsp Fresh Ginger, (minced)
  • 1 tblsp Lime Juice
  • 8 -10 Mint Leaves
  • 6 oz Maine Lobster, (medium diced)

This Watermelon Soup with Maine Lobster  recipe  can be served chilled, or room temperature.

Preparation

Place the Seedless WatermelonGinger, Lime juice and Mint leaves in a food processor. Purée until smooth and fully incorporated, about 45 seconds to 1 minute.

Method

Once incorporated, strain though a fine mesh strainer into the small mixing bowl to remove excess pulp. At this point, you can chill your strained Watermelon broth for 45 minutes, or serve the soup at room temperature. Smart Kitchen prefers chilling before service to combat the heat.

Once chilled (or at room temperature if you prefer), fill a soup serving bowl halfway full with the strained Watermelon broth.

To garnish, place 1 tablespoon of of Lobster on a pinch of Sprouts and Mint leaves. Carefully, center the Lobster ontop of the sprouts island, in the center of the filled soup bowl to add a treat for the eye and taste buds.
