Ingredients
  • 1 LB Sweet Potatoes (Medium Dice)
  • 2 Cloves Garlic (Mince or Pressed)
  • 3 T Walnut Oil
  • 2 T Sesame Seeds
  • 2 T fresh Rosemary (Minced)
  • 2 Shallots (Sliced)
  • 1 t Cinnamon (Ground)
  • 1/4 t Nutmeg (Ground)
  • 1/4 t Cloves (Ground)
  • Filtered Water
  • Kosher Salt and White Pepper to Taste

 METHOD

Begin these Steamed Sweet Potatoes by filling your Steamer, or pot to be used as one, with about 2 inches (5.08 cm) of filtered water and setting it on the stovetop on High Heat to Boil and create steam.

While the water is heating, Prepare, the 2nd of Smart Kitchen’s 4 Levers of Cooking,™ your ingredients.  Dice the Sweet PotatoesMince the Garlic, Slice the Shallots and Mince the Rosemary. You do not need to peel the Sweet Potatoes but can if you so desire. Let the ingredients sit until the pot/steamer has built up a head of steam.

 When the steamer/pot is ready fill your Steaming Basket with the Sweet Potatoes, Shallots, and Garlic. Carefully insert it into the pot/steamer and replace the lid. Steam the vegetables covered for 6 or 7 minutes, until the ingredients are well cooked. Use the Knife Test to check for doneness. If the point of a Paring Knife slips in easily and comes out cleanly the Sweet Potatoes should be done.   

With the ingredients steamed, carefully avoiding the hot steam, remove the contents of the Steaming Basket and transfer them to a Mixing Bowl. Toss the Sweet Potatoes, Shallots and Garlic with the remaining ingredients.  If you don’t have Walnut Oil, a good Extra Virgin Olive Oil can be substituted. Feel free to add your own Flair, the 4th of The 4 Levers of Cooking such as optional Salad Dressing, Spices, Nuts or Herbs.  Serve immediately as a Side Dish, Garnish or vegetarian Entrée.
