Anise is available year long.

Purchasing

When buying fresh Anise, the leaves should be dark green with no yellow or brown spots.  Dried Anise Seeds will be more faded and have a yellow/brown color.

Storage

Fresh Anise will last 1 week refrigerated. It can also be wrapped in foil and plastic and frozen for several months, with little loss of flavor.

Culinary Uses

Anise is a plant whose seeds (Anise Seed) are used in the kitchen for flavoring Cakes, a few Sauces, and for Marinating Meats and Fish. It also has a liquor named after it.

Anise is Sweet and very Aromatic. It is used to make the following confectioneries:

  • Anise Seed Balls (Britian)
  • Humbugs (Australia)
  • Anise Seed Wheels (New Zealand)
  • Pizzelles (Italy)
  • Pfeffernusse (Germany)
  • Knotts (Norway)

Anise Seed is also used to make the Mexican drink "atole de anis" or champurrado which is similar to Hot Chocolate, the Turkish drink "Raki" (alcoholic beverage), the Greek "Ouzo," the Italian "Sambuca," the spirit "Absinthe," the favorite for Arabic "Arak," some root beer such as "Virgil's Root Beer," in the United States and as a digestive after meals in India.

It is also used to make the Dough, when preparing the famous Peruvian dessert "Picarones." In Columbia, it is also used to add to the national drink "Aguardiente," in which, depending on the region, more or less Anise gives the typical drink its distinctive taste.

Allow 1-2 t of Anise per recipe.
