Barbecue, "Bar-B-Q," or "BBQ," the traditional style, is slow cooked (for hours or days) using indirect low heat (conduction and convection). Think of it as “low & slow” roasting (maybe with a bit of wood smoke) that can achieve a dark brown, caramelized exterior with tender, flavorful meat. Contrary to conventional wisdom, grilling is not barbecue.
