Compound Sauce (Sauces Composée in French) is another name for Small Sauce, essentially a descendant of a Leading Sauce or a second generation or higher product of a Mother Sauce.

Compound Sauces or Small Sauces are typically made by adding ingredients to a Mother Sauce or Leading Sauce. The variation and complexity can be extensive.

Varieties

Examples of Compound Sauces include: Sauce Foyot, or Sauce Chiron both descendants of Sauce Béarnaise, a Leading Sauce product of Hollandaise Sauce.
