New Orleans is a city that has been strongly influenced by France and French culture. In fact, the city was founded by the French in the early 1700's and even named for a French Duke, Phillip of Orleans. Though New Orleans culture has been shaped by many countries, especially Spain, Africa, Cuba and the Caribbean island nations, France holds most sway, especially in the kitchen.


The two main types of cuisine in New Orleans are Creole Cuisine and Cajun Cuisine, both based on French styles of cooking. Creole is the more sophisticated of the two. Creole Cuisine uses classical French cooking ideas such as cooking with butter and/or cream, but also has Spanish, African, and Cuban elements in its spicing and things like its wide use of hot and sweet peppers.
