Garlic Butter, which is also called Beurre à la Bourguignonne, is a Compound Butter classically made by adding Puréed Garlic to Tempered Whole Butter and mixing them both together until fully incorporated. Once combined, the Garlic Butter is chilled before use. It can also be Rolled or formed into other shapes, molds, etc.

Most famously, Garlic Butter is used to make Garlic Bread, Scampi, and to accompany Escargots à la Bourguignonne.

Season

Garlic Butter is a food product and as such does not have a season.

Availability

Garlic Butter is available all year long in the refrigerated section of better Specialty Grocery Stores.

Production

Purchasing

As with all packaged food items, check commercial Garlic Butter for the freshness date. Also make sure that the package is sealed and intact.

Another thing to consider when purchasing commercial Garlic Butter is that the majority of our domestic Garlic comes from China. Much of it is used in prepared products such as commercial Garlic Butter. This is an important consideration since China’s agricultural production rules, including pesticide use and chemical treatment of their products “differ” (to be kind) from our own.

Storage

Garlic Butter, like the Whole Butter which is its main ingredient, should be kept covered in an air tight container and stored in the refrigerator for up to 1-2 weeks.

Most commercial Garlic Butter is made in industrial quantities using Granulated Garlic and Garlic flavorings which do not have the same positive health impact as fresh Garlic. Even if made with Puréed Garlic, the ratio of fresh Garlic to Whole Butter is not nutritionally significant, making Garlic Butter nutritionally similar to Whole Butter (mostly fat). 

The other issue is that much (as high as 75%) of the commercial Garlic Butter is made using imported Chinese Garlic which is grown under less stringent rules governing pesticides and chemical additives like bleaching agents, preservatives, etc.
