Cotoletta alla Palermitana is a Sicilian dish (taking its name from Palermo, the capital of Sicily) that is made from a Boneless Veal Cutlet brushed with Olive Oil (or Lard) and Breaded with a mixture of breadcrumbs, Oregano and Parmesan Cheese. It is similar to Cotoletta Milanesa, but is Grilled instead of Deep Fried.  Also, an egg batter is not used with Cotoletta all Palermitana. For an extra bit of Flair, the fourth of Smart Kitchen’s 4 Levers of Cooking, grill the Cotoletta on a Lemon leaf.
