Coarse Sugar, also known as Decorating Sugar or Pearl Sugar, and sometimes Sanding Sugar, is a similar Sugar to Granulated Sugar but milled so that it has larger, coarser granules.

Culinary Uses

Coarse Sugar is used in cooking for Fondants, Confections and Liquors where the large crystal’s resistance to color change and Inversion at cooking and Baking heats is desirable.

Larger Coarse Sugar crystals are recovered when molasses-rich, sugar syrups high in Sucrose are allowed to crystallize.
