Dried Beans are available at most grocery stores in bulk or already packaged. They are Fresh Beans that have been commercially dried. 


Black BeansChickpeasPinto Beans, and Kidney Beans are some of the more popular Bean varieties sold dry.


Dried Beans should be stored in an air tight container and in a cool, dark place like a pantry. Properly stored they can last up to a year.

Culinary Uses

To be used Dry Beans must be soaked in water to re-hydrate them for use. Soaking times range from several hours, to overnight. If you come across “Quick Cooking” or “Fast Cooking” dried beans, they have been pre-soaked and then dehydrated again. They are quicker because they skip the soaking step required by typical dried beans. The drawback is the ultimate texture of your cooked beans. Quick beans are not as firm to the bite when served.


Dried Beans are a good source of protein, calcium, iron and phosphorus. They also contain oligosaccharides, which are complex sugars that the body can’t digest. The oligosaccharides are what give Beans, especially Dried Beans when cooked, the odiferous, bloating reputation for flatulence production.

Not all Dried Beans are readily edible. Some like, Kidney Beans hold toxins that only a cooking heat, like an extended Boil, can render safe for consumption.
