Duxelles is a French term for a Mince of Mushrooms, or Mushroom stems, that are Sautéed in Butter, and Reduced to a paste.  Frequently, OnionsShallots and herbs, sometimes even Cream is added as well.  

Culinary Uses

Duxelles is a foundation and is used in stuffings (like for Beef Wellington or savory tarts for example) and sauces or as a GarnishDuxelles were first created by Francois La Varenne.

Sauce Duxelles is a classic French Sauce.
