E. Coli (Escherichia coli) has several strains though the one recognized by the production system to be most dangerous is 0157:H7. E. Coli can cause infection and intoxication by an enterotoxin. E. Coli is found in feces, as in the intestinal tract of humans and animals like cattle, contaminated water, and other fecal contamination. E. Coli breakouts occur most often in the modern distribution system in raw or undercooked red meatunpasteurized dairy products, and fish from contaminated waters.


Observe proper temperature control and thoroughly cook all food, especially red meat. Avoid cross contamination by using appropriate storage & handling practices. Practice good hygiene. Use only certified fish & shellfish.
