Fennel is an herb with a licorice taste

The name, "Fennel," is derived from the Latin "feniculum" or "foeniculum." Which in turn is the diminutive of "fenum" or "faenum," which means "hay."

The old English called it "finule" and it was invoked in the 10th century in the "Anglo-Saxon's Pagan Nine Herbs Charm." Fennel, was also the plant used by the mythical Prometheus to steal the gods' fire.

Season

Fennel's season is Fall through early Spring. It can be considered with all of the following groups: Fall Fruits & Vegetables, Winter Fruits & Vegetables, Spring Fruits & Vegetables.

Availability

With greenhouse production, Fennel is available throughout much of the year in most regions.

Purchasing

When purchasing whole Fennel, look for bulbs that feel heavy for their size and have tightly packed vibrant green stalks. The stalks should feel firm and sturdy. Avoid Fennel with very loose outer layers or that look brown or split on the outside.

Storage

Fennel is best kept refrigerated in a plastic bag. Fennel will last 1-2 weeks refrigerated and 8-10 months frozen.

Culinary Uses

Fennel can be eaten Raw, Braised, Sauteed or Roasted. The bulb, stalk and Fennel Seeds are used. The Fennel Seeds are the most potent part of the Fennel plant and they are often used for Seasoning.
