Coppacollo (also Coppa or Capicola) is a Cured Meat, popular in Italy, that is made from the Meat found in the Pig Shoulder or Pig Neck. It is usually Dry-Cured, and then coated with Black Pepper or a Cayenne Pepper during the curing process.
Coppacollo has a marbled appearance from its high Fat content, which makes also makes Coppacollo especially tender. In Europe, Coppacollo is a Protected Geographical Indication and only cured meats produced in certain regions of Italy can use the name Coppacollo.
