A Dried Shallot is a Fresh Shallot (often at retail a Cured Shallot) that has been Dehydrated, exposed to a low level of heat until all of the moisture has been removed. Dehydration helps to preserve the Shallot so that it won’t spoil in storage. Dried Shallots can keep almost indefinitely, as long as they remain dry.

Dried Shallots are typically Sliced, flaked, or Chopped. Dried Shallots can be purchased commercially or made at home by the home chef or gardener.


Dried Shallots are available all year long.

Culinary Uses

Dried Shallots are intended to preserve Shallots so that chefs can have them “on hand” when they need them, despite the season. The drying process removes some of the flavor from the Shallots, but Dried Shallots still make an excellent addition for Soups, Salads, Sauces, Casseroles, etc.

When making Dried Shallots in the home kitchen, the Shallot should be peeled completely before being Sliced very thinly or Diced finely. The thin slices should be arranged, with plenty of space between them, on a Drying Rack (or tray) so that air can flow around and between them. The fine Dice, if you go that route should be put on Wax Paper before being placed on the Drying Racks. The Diced product should be stirred and moved around a few times during the dehydration period to make sure each piece is drying properly.

Place the Drying Racks into a Dehydrator for about a day or so. If in doubt, read the instructions on your dehydrator. When the Shallots look and feel very dry and break apart easily, you can consider them dry. The Diced Shallots are ultimately easier to measure with a Measuring Spoon or Measuring Cup for use in various Recipes.
