There are records of Greek bakers making Gingerbread as long as 2,500 BCE. Apparently, they were trading with the Orient, where the flavor of ginger is very popular. It is so popular in Europe, that at one point in 1884 Britain imported 5 million tons of ginger from Jamaica. Although Jamaica is famous for its ginger, it is actually grown in many places in the tropics. In recent history, Asia has dominated the ginger trade with India, China, and Indonesia as its' leading exporters.

Season

Fresh Ginger peak season starts in the Spring and carries into the Summer months.

Ginger is available all year long.

Purchasing

Ginger Root is not actually a Root its a Rhizome, and has a tough outer skin that is removed before use. Ginger comes fresh by the weight or Dried form.

Avoid fresh Ginger that has dry steams and feels light for its size. This is an indication the Ginger is starting to decay and dry out.

Fresh Ginger should have firm stems and feel dense.

Storage

Store fresh Ginger, unpeeled and unwashed in a plastic bag and keep refrigerated. Fresh Ginger will last 2-4 weeks refrigerated.

Fresh Ginger can be stored frozen. When fresh Ginger is stored in the freezer, it will last 4-6 months. 

Culinary Uses

It is also one of the few that can be used anywhere in the kitchen. from the Meat Marinades to Fruit Salads.

Portion Size

Allow 1/2-1 t of Ginger per recipe.
