Granulated Sugar is another name for White Sugar or common Table Sugar (Sucrose), the type of Sugar you likely think of when the word “Sugar” is mentioned.

Production

Granulated Sugar is made from Beet Sugar or Cane Sugar that has been processed so that it crystallizes (Raw Sugar), and then dried and spun to separate the Sugar crystals from the Molasses and Sugar Cane Juice. Once separated the Sugar crystals are refined and bleached to a perfect whiteness by dissolving and purifying the Raw Sugar using phosphoric acid, or a carbonation process employing calcium hydroxide and carbon dioxide, or by various filtration strategies. Once purified, it is then further filtered through a bed of activated carbon or bone char.

Prior to the invention of the modern refining process, Granulated Sugar was transported and sold as Lump Sugar. Because residual natural moisture would cause the White Sugar to clump together, our ancestors had to buy blocks of Sugar, which were stored in a cool, dark place, and then broken down or shaved for use. Granulated sugar is the most commonly employed type of refined sugar, and the type that most people are likely to consume on a daily basis. Sugar is available in many forms, including Lump Sugar (Pressed Sugar Cubes and/or Cast Sugar Cubes).

Once refined, Granulated Sugar can be milled to make Coarse Sugar (Sanding Sugar), Regular Grain Table Sugar with grains about 0.2 inches (0.5 mm) wide, and smaller grained Castor Sugar (Super Fine Sugar) where the grains are about  0.014 inches (0.35 mm) wide.

Granulated Sugar can also be “Screened” to a powdery fine texture to make Powdered Sugar in a number of different sizes. The link above has much more information on Powdered Sugar.

Strange as it may sound, refined, white Granulated Sugar is often used to make Brown Sugar by adding back some Molasses to the white Granulated Sugar. If 3.5% Molasses is added back, Light Brown Sugar, with a blonder color is created. If 6.5% Molasses is added back, Dark Brown Sugar is created. Refined Sugar can also take a few different forms including : Mill White (also known as Plantation White, Crystal Sugar or Superior Sugar) which is mostly relegated to Sugar growing regions because it does not ship well, Blanco Directo which is common in India and South Asia, and White Refined Sugar, the most common and familiar form in the developed world.

Storage

Even though Granulated Sugar has been dried to cut out moisture and prevent clumping, it will still readily clump if it is given an opportunity to do so. Sugar should be stored in a cool dry place away from heat and moisture to ensure that the grains stay separated. Sugar which has clumped can sometimes be broken up in a food processor or by hand, but it is important to smooth out all the clumps so that they do not compromise the recipe the sugar is used in.

Granulated Sugar will last indefinitely. However, Granulated Sugar is best used within 2 years after opening.

Culinary Uses

Granulated Sugar is perfect for general home use because it dissolves quickly and has very good sweetening power. Granulated Sugar is called for in recipes for Cakes, Pies, Breads, Sweet Glazes, etc. When making jams and preserves, Granulated Sugar can also act as a preservative.

Once dishes leave the kitchen, Granulated Sugar can still be used at table to sprinkle over served foods to augment their sweetness.

When recipes call for Sugar, without specifying the type, they usually are calling for Granulated Sugar.
