Milk Solids are the Proteins, milk sugar (lactose) and minerals (but not the milk fat) present in Milk.

Culinary Uses

Milk Solids burn easily and are the reason that Whole Butter has a Smoke Point of between 300°F-350°F (149°C-177°C), while Clarified Butter (with the Milk Solids removed) has a much higher Smoke Point at 485°F (252°C).
