The Italian Zucchini Squash (also known as a "Courgette" in most of Europe and New Zealand), is what the Italians, Germans, Australians and Americans commonly call a "Zucchini." Zucchini, which is a Summer Squash, can grow to be almost 3 feet long but are usually more tender if harvested earlier.

In the kitchen we think of Zucchini as a vegetable because of its taste but it has seeds and is technically a fruit. 

Sometimes it is confusing but a Zucchini is not a Cucumber, though they have similar dark green skin, pale seedy flesh, and a long tubular shape. Touching both is one way to differentiate. Cucumbers are cool and waxy to the touch. Zucchinis are rougher and feel dry. They also cook differently but can complement one another or at least work well together as in a Zucchini/Cucumber Garnish


Italian Zucchini Squash is available year round.

Culinary Uses

For preparation, Zucchini can be PeeledSquared Off, of just Sliced  raw and halved or quartered for further roasting, cooking, baking or grilling.  When cooked, Zucchinis soften, sweeten and brown on the stove top or in the oven. Raw zucchini is a little sweet and a little bitter, a more hearty taste. Though there are exceptions, we frequently prefer to use Zucchinis cooked. One way we like is Grilled Zucchini that can be eaten as a vegetable side dish or as part of an Appetizer like Smart Kitchen's Vegetable Crudité.
