Jaggery (also known as GurGud or Gul) is a solidified molasses, traditionally made by evaporating Sugar Cane Juice over a heat source to make a thick sludge. The Jaggery is then cooled and molded into buckets. Jaggery is heated at a higher temperature than that used to make Rapadura.

Culinary Uses

Jaggery is used to sweeten older fashioned, traditional entrees, sweets and desserts.
