The Lemon is traced back to northern India, where the lemon tree still grows wild. Lemons were then cultivated in Africa, Europe and eventually America. The citrus fruit is oval, with pointed ends. Its peel is semi-thick, porous with essential oils.The flesh of a common Lemon is translucent yellow and juicy when ripe. Depending on variety, lemons may contain no seeds or numerous seeds.

Season

Lemon trees yield fruit from Winter into early Summer. Lemons are typically at their best in late Winter. Lemons can be considered both a Winter Fruit or a Spring Fruit.

Availability

Lemons are usually imported and are therefore available year round.

Cultivation

Lemons are known to tolerate drought and poor soil, though they are cold sensitive and require some rainfall for continuous growth. Lemon trees that undergo stress will produce far less yields and inconsistent quality fruits.

Production

Purchasing

Purchase Lemons that are heavy for their size. The Lemons skin should be bright yellow, smooth, and have no scars. Lemons should also be firm when pressure is gently applied in the palm of your hand.

Storage

Lemons can be stored at room temperature or in the refrigerator. When stored at room temperature, Lemons will last 7-10 days. When stored in the refrigerator, Lemons will last 3-4 weeks.

Culinary Uses

Lemons are heavily utilized as a flavoring agent in various forms.  The bright yellow thin outer layer of the peel is very edible and used for multiple applications. When the peel is removed or Zested it releases intense sweet citrus aromas.  Lemon Juice is highly Acidic and Tart, though extremely versatile in its uses.

Portion Size

Allow 1-2 t of Lemon Juice per recipe.
