Macachiados Lentilsare a yellow Mexican variant of Lentil that came to Mexico with the Spaniards. Macachiado Lentils are about the same size as other Lentils and are a staple in Mexican cuisine.


To ensure the best quality and shelf life of your Macachiado Lentils, buy Macachiado Lentils that have a bright uniform color; a dull color indicates a lack of freshness and vitality. Also look for Macachiado Lentils that are uniform in size since varied sizes result in uneven cooking times. Inspect the Macachiado Lentils for cracks or holes and avoid buying any packaging that has been damaged. Macachiado Lentils are sold whole or split into halves.

Macachiado Lentils are less commonly found. You will likely need to find a specialty store to buy them. Mercados (Mexican food stores) will likely carry Macachiado Lentils near the bulk Rice, Chiles, Spices, etc. Macachiado Lentils are often found in 1 pound (.5 kg) bags.


Dried Lentils are known for their long, almost indefinite shelf life. Store your dried Macachiado Lentils in a sealed package or airtight container in a cool and dry area, such as your pantry. Refer to the expiration dates on the package to determine how long they can be stored. For best flavor and presentation, use dried Macachiado Lentils within one year. Fresh Macachiado Lentils should last about 5-7 days in the refrigerator.

Culinary Uses

The most unique thing about the Macachiado Lentil is its unique, very strong, nutty taste. Macachiado Lentils are typically prepped by rinsing them and Boiling is the most common cooking method. During the cooking process, the Machiado Lentils absorb some of the cooking water, so it is a good idea to flavor the Boiling Liquid with some Herbs or Vegetables that will make them even tastier. In Mexican cuisine, Macachiado Lentils are additionally flavored with Spices, and Chiles. They also pair well with Pork (Chorizo, Bacon, Stew Meat and Ribs). In the Yucatan region of Mexico, they add in all of the above to a single pot of Macachiado Lentils. In Oaxaca, Macachiado Lentils are cooked with Pineapple and Plantains to make a sweet / savory dish that shine, even without Meat. In Querétaro, Macachiado Lentils go into the pot with Nopales and Cilantro, which gives them a real Mexican taste.


Macachiado Lentils are a good source of Calcium, Potassium, Niacin, Zinc and Vitamin K. They are a particularly good source of Dietary Fiber, Lean Protein, Iron and Folate.
