There is debate between the FDA and the culinary community about what temperatures should be used to reach Medium Well. The culinary community posits that meats cooked Medium Well should have reached an internal temperature of 150° F (66° C) to 155° F (68° C). The FDA does not have a recommendation for Medium Well but their next closest temperature recommendation is 160°F (71° C) for medium, which should still overcook your end product if you are seeking Medium Well.
