Mirepoix is a Classic French Technique that is not a stock but a pre-cursor step to making Stock.

Culinary Uses

Mirepoix is a mixture of 50% Onion, 25% Carrot, and 25% Celery. These ingredients are usually cut into Parmentier/Medium Dice at ½” (1 CM) and either Caramelized and Sweated, for a Brown Mirepoix, or just Sweated without browning the ingredients for a White Mirepoix.
