Mustard Seeds are seeds from various Mustard Greens (Mustard Plants). The seeds are small (about 1 or 2 mm in diameter) and round and can be colored white (sometimes called yellow), brown or black.

The Mustard Seed was known in antiquity. Ancient Egyptians consumed them as a “Just in Time” Spice by popping Mustard Seeds into their mouths while chewing Meat. Ancient Jewish texts use the Mustard Seed as a metaphor for the size of the knowable universe and the original size of the expanding universe.

Production

Canada (186,000 tons) and Nepal are the world's major producers of Mustard Seed, between them accounting for around 57% of world production in 2010.

Varieties

The black seeds come from Black Mustard. The brown seeds come from Mustard Greens (Indian Mustard) and the white/yellow seeds come from White Mustard.

Culinary Uses

Mustard Seeds are primarily used in cuisine (by volume) as the main ingredient in the condiment Mustard, which is made by grinding Mustard Seeds with water and an Acid. Other ingredients can be added for flavor and style. Mustard Powder (made from Ground Mustard Seeds) is another primary use of Mustard Seeds.

Mustard Seeds are an important spice in many regional foods. Aavaa Pindi is powdered Mustard Seed and used in Indian Cuisine and Nepalese Cuisine. If not ground, the Mustard Seeds are usually roasted until they pop and then used as a Spice. Whole Mustard Seeds are also used to make SauerkrautPicklesRelishesCurriesSaucesPot Roasts, and to flavor Meats such as LambPork, and Rabbit.

Mustard Seeds can be sprouted and used in SaladsSandwiches, or as a Garnish.

Because they are as high as 46-48% Oil, Mustard Seeds can also be pressed to make Oil. In Pakistan, for example, Rapeseed-Mustard Oil is the second most important oil (about 17% of domestic Pakistani production), after Cotton Oil.
