Culinary Uses

One of the most important uses of Papain in culinary practice is for Tenderizing.

Papain is also extracted and used as a digestive enzyme dietary supplement and in some chewing gums.

Nutrition

Papain is an enzyme that helps break down Proteins. Papain is a main ingredient of commercial, powdered meat tenderizers.

Traditional medicine has also used Papaya and/or Papain as a topical agent for the treatment of cuts, rashes, stings and burns. Papain ointment is commonly made from fermented papaya flesh, and is applied as a gel-like paste. Harrison Ford was treated for a ruptured disc incurred during filming of Indiana Jones and the Temple of Doom by papain injections.

Papain is highly concentrated in unripe Papaya and in other parts of the Papaya tree.
