Parmesan Cheese is a world-renowned Italian cow’s milk Cheese from the region of Parma.In Italy Parmesan Cheese is a Protected Geographical Indication and there are many rules concerning how Parmesan Cheese is produced. Throughout Europe, only Cheese made following the stringent Italian guidelines and produced in particular areas of Italy can be called Parmesan Cheese. Italian Parmesans must be aged at least two years before being put on the market.

Outside of Europe, many cheese makers produce Parmesan at varying levels of quality.

Parmesan Cheese is not always a “cheesy dust” in a green tube. Better Parmesan Cheeses are a Hard Cheese with a salty flavor, grainy texture and “dry” Mouth Feel. Good ones almost make you pucker, they are so dry.

Varieties

Parmigiano-Reggianois the most famous Parmesan cheese (named for the area of Italy where it is produced and the concept of being fit for royalty).
