In food and cooking Raw means uncooked, unprepared, unprocessed and/or undressed.
Some Raw can be dangerous to consume. This is especially true of Raw Meats which can contain dangerous Pathogens that are only killed by cooking heat.
Vegetables, especially Root Vegetables and those vegetables grown in the ground, (as opposed to those grown up higher on the plant) can also contain Pathogens such as E Coli and Botulism spores.
