A Roasting Rack currently costs around $10 US Dollars (USD) to $25 USD, depending on its features. Stainless Steel costs more than Aluminum. Adjustable Racks and those with non-stick coatings cost more too. Various sizes are available and different sizes fit inside different sized roasting pans. Obviously, larger Roasting Racks are needed for larger food products. Don’t forget to give a thought to the size of your oven before buying a Roasting Pan and/or a Roasting Rack. Larger Roasting Racks and Roasting Pans offer more flexibility in the kitchen. Some Roasting Pans come with a Roasting Rack included.

Culinary Uses

A Roasting Rack is a rack, typically a metal frame, that is set into a Roasting Pan and used to raise cooking meat up out of their own juices while Roasting. If the meats or other items sit in their juices in Roasting heat, they will cook by all of the following: StewingSteaming and Braised, which produces a less desirable result. Covering the meat too tightly, even on a Roasting Rack, can also cause steaming, which in turn will keep the skin from browning and crisping nicely.

Generally, Chicken and other PoultryRoasts (Beef, Lamb, Pork etc.) are raised with a Roasting Rack when roasted. The roasting rack can be flat, v-shaped, square or oval. Some are adjustable, adding more versatility. They are generally made of stainless steel, but some inexpensive ones can be made of aluminum.

The interconnected metal wires of the roasting rack allow the air to circulate around the meat as it cooks which not only helps prevent burning, but also improves the Sear that makes the skin of the meat crispy and golden and allows the hot air of roasting Convection to work on every surface of the product.

Most Roasting Racks have a non-stick coating that eases the separation of the cooked product from the rack with minimal sticking and tearing. They can also feature handles (in addition to those on the the roasting pan), which lets chefs more easily lift the product and roasting rack from the oven to Rest on a Cutting Board. Pulling out the Roasting Rack leaves all the grease, drippings and Fond in the bottom of the Roasting Pan, where it can be De-Glazed and used to make Gravy or Sauce.
