Sage is an herb with long, gray green, narrow and slightly furred leaves that offer a warm musty intense flavor. Its tendency is to release a potent camphor aroma giving this herb the reputation to use sparingly.

Season

Sage is best in the Fall.

Availability

Sage is available all year long.

Purchasing

When buying fresh Sage, the leaves should be dark green with no yellow or brown spots.  Dried Sage leaves will be more faded, but should still retain a little green color.

Storage

Fresh Sage will last about a week refrigerated. It can also be wrapped in foil and plastic and frozen for several months with little loss of flavor.

Culinary Uses

Sage is often used with either strong, meaty flavors or subtle flavor companions that enhance its distinct, woody characteristics.

Allow 1-2 t of Sage per recipe.
