Purchasing

When shopping for Savoy Cabbage, look for individual cabbages that are compact and seem somewhat heavy for their size.  It’s all right if a few of the outer leaves are roughed up, they’re likely to be tossed anyway.  Avoid any Savoy Cabbage that are speckled with brown or yellowish dots, which is a sign the cabbage may have bugs or starting to mold.  Savoy Cabbage leaves that are browning or separating from the bottom stem, means the cabbage is on the older side.

Storage

Store Savoy Cabbage in the refrigerator in a plastic bag or wrapped in plastic wrap.

Savoy Cabbage fragile and will only last four or five days, a week at most refrigerated.

Allow 3-4 oz of Savoy Cabbage per person.
