The Summer Black Truffle (Tuber aestivum) and also known as the Truffe de la St. Jean, English Truffle, Scorzone Truffle, Tartufi Neri Estivi (in Italian) and the Truffe d’Été (French for Truffle of Summer) has a smooth black exterior surface, with a knobby roundish shape and a lighter Glebe (interior flesh) with white spidery veins. They look very similar to the more desirable Black Périgord Truffle.

They are found in some of the same territory as the Black Perigord Truffle (France, Spain, Italy, and England) but the major differences between the Summer Black Truffle and the Black Périgord Truffle are that Summer Black Truffles are, obviously, harvested in the summer (May to September) and not the winter, they are slightly larger, their interior flesh is a paler color than the Périgord and they have a less pronounced aroma than the Périgord. Less pronounced does not mean bad and the Black Summer Truffle has a nice subtle perfume and is still an expensive item and a treat to work with in the kitchen.  Cooking heat brings out the best of their forest mushroom, “underbrush” flavor.

Storage

As with all fresh Truffles the sooner they are used the better. You may be able to get 1 to 2 weeks from them under refrigeration and wrapped in their absorbent packaging paper.

Culinary Uses

This variety is more plentiful because it can adapt to its environment and is consequently more available and appreciated around the world. It is best when it reaches full maturity and most black truffle-based products (Truffle ButterTruffle OilTruffle PasteTruffle CheeseTruffle Peelings, etc.) use the Summer Black Truffle. Summer Black Truffles are also great as, or in, Canapés and Appetizers, adding Flair to meat or fish, and even sliced to distinguish a Salad. About 1 oz. (30g) of product is considered a portion.
