A Brown Sauce in one of the five French Mother Sauces. It is a Sauce made with a Brown Stock base, to which a Roux is often added, as well as other ingredients to make a wide variety of different sauces. 

Culinary Uses

Brown Sauce is also another name used to describe Espagnole Sauce, though Tomatoes are added to Brown Stock to make an Espagnole. Smart Kitchen’s Exercise on Brown Sauce has more information on this Mother Sauce.
