Bulgur Wheat, also known as Bulgar, Bulghur, or Burghul, is a preparation of whole wheat. Bulgur Wheat is cleaned, steamed and/or par-cooked, then dried. Finally, Bulgur Wheat is ground into several sizes of grain: Fine, Medium, Coarse & Whole Grain.  

The Romans and Egyptians were eating Bulgur Wheat as early as 1,000 B.C. and it has been part of the Middle Eastern Diet for thousands of years, variously associated in the Old Testament with Hebrew, Babylonian and Hittite civilizations.

Durum Wheat is the most common form of wheat to use to make Bulgur Wheat, but it can be made from any wheat variety. Bulgur Wheat has a delicious, mildly nutty taste.

Store Bulgur Wheat in a dry, cool area. Bulgur Wheat will last 4-6 months if stored properly. When storing Bulgur Wheat in the freezer, it will last indefinitely.

Culinary Uses

Though it is not written in stone, each size has its preferred uses. Fine ground is used for hot cereals and desserts. Medium is good for Tabbouleh (or other Bound Salads), Stews, Breads, etc. Coarse can work for Casseroles, Pilafs, Stuffings and fresh Salads. Whole Bulgur can be an ingredient in Soups or Stews or worked into baked goods.
