In addition to its meat grading system, The United State’s Department of Agriculture (USDA) classifies meat based on the percentage of lean content contained in the package.


The maximum fat content, by weight, in “Extra Lean” meat is 5 g per 100g of meat. Only 2 g of that can be saturated fat and there should be no more than .003 ounces (95 mg) of cholesterol per .22 pounds, roughly 3.5 ounces, (100 g) of Extra Lean meat.
