"Cerises" means cherries in French and a Sauce aux Cerises is a Cherry Sauce.

The classic Sauce aux Cerises is made from Port Wine, mixed spices, grated orange zest, Red Currant Jelly, Orange Juice, and De-Pitted Cherries that have been poached in syrup.


There is also a Sauce aux Cerises (Sweet).

Culinary Uses

Escoffier in Le Guide Culinaire describes Sauce aux Cerises as well suited to Venison and Braised or Poêléed Duck.
